Spring Beauty

These beautiful little flowers are everywhere now. Yards are covered with blankets of them. They grow best in open area in yards, pastures and open spaces in woodlands.
Spring Beauty is one of the very first to bloom in spring and forms extensive patches of snowy white on warm, sunny days. It's bulb-like corms are edible and were an important food source for many Indian tribes. Raw, the taste similiar to a radish and when boiled have about the same taste and texture of boiled potatoes.
