The American Persimmon



Late fall brings forth orange persimmons and the wildlife have a field day on them.


They are very bitter until fully ripe. Once ripe they fall to the ground and are very mushy. Possums and Racoons love them! Horses will eat them as well, but if they eat very many it will make them severely ill.


Persimmons are used in Asia in many culinary ways. They are high in protien and glucose as well as vitamin C and other important nutrients.


I have always heard that they are not good to eat until they have been "bitten" by a heavy frost.
